If you go the original trilogy route, The question is: Which versions? The original, unedited trilogy has become very hard to find and there are now multiple versions of the Star Wars “Special Editions.” Disney+ has the most current ones, but if your curious read the breakdown of what version they have here.
Roku has the original unedited version of the first movie for some reason. I don’t think they have Empire or Jedi.
You can track them down on VHS. The video quality is not going to be great, and you’ll need a VHS player.
Seek out Harmy’s Despecialized Edition or Project 4K77. These are both HD fan reconstructions of the original trilogy and exist in a legal gray area where they’re not exactly illegal but also can’t legally be sold. You can find them on torrent networks but be careful. You can read an intro to torrenting here. It’s not 100% clear, but the version of Star Wars on Roku might be the Harmy version. You might be able to find a Bluray version to purchase online but buyer beware.
If you want one of the older “Special Editions” they can be found on DVD, but the video quality won’t as good as the Bluray, or what’s currently streaming.
There’s never a bad time to have a Star Wars party, but if you want to build it around a specific date:

May 5: Star Wars Day: "Revenge of the Fifth" (Sith Lords can also celebrate on…)
May 6: Star Wars Day: “Revenge of the Sixth” (…as some feel that’s the better joke)
May 14: George Lucas (Creator/Writer/Director) birthday
May 16: Attack of the Clones anniversary (25th anniversary in 2027)
May 19: The Phantom Menace anniversary (30th anniversary in 2029) and Revenge of the Sith anniversary (25th anniversary in 2025) and Peter Mayhew (Chewbacca) birthday
May 21: The Empire Strikes Back anniversary (45th Anniversary in 2025)
May 22, 2025: The Mandalorian and Grogu scheduled release date
May 25: Original Star Wars anniversary (50th anniversary in 2027) and Return of the Jedi anniversary (45th anniversary in 2028)
July 13: Harrison Ford (Han Solo) Birthday
September 25: Mark Hamil (Luke Skywalker) birthday
October 21: Carrie Fisher (Princess Leia) birthday
